That of the butcher, is an ancient craft, and Umbria, in particular, has managed to make it a real culinary art renowned since Roman times. We will have a guided visit to a prestigious farm near Assisi, and there we will learn the secrets of this tradition: the anatomy of the pig, the basic techniques of cutting the pig, processing of meat up to the production of sausages, preservation , salting, and aging of meat. At the end of the lab, we will have a well-deserved lunch with the results of our work accompanied by other Umbrian typical products!
In the afternoon we will reach Assisi for an adventurous ATV tour in the middle of nature, along a naturalistic trail of great beauty. You will discover an unexpected side of Umbria while admiring the nature surrounding Assisi in Mount Subasio, on board a fun and comfortable means of transportation. During the excursion a stop in the middle of the forest for an aperitif included.
