Wan is a very experienced carver. It’s a shame we only signed up to a half day class as I would have liked to learn more but I had a good experience
Wan is a master carver..when in class in person she knows your next move in carving a piece and is right there to assist. A wonderful.learming experience. Plus they offer classes on video so you can continue learning and getting guided instruced practice.
This class will set up apart from other chefs. All the tools and information you need to make exquisite decorations from vegetables (tomato, cucumber, radishes, pumpkin, etc) and fruit you will learn. The teacher is so patient and creative. She never stopped creating new designs and never got tired of me constantly needing a lot of instruction. Even if you are a home cook this is a great fun way to spend the afternoon and learn a skill. If you are a professional chef this knowledge will set you apart from other chefs. A knife and lunch is included.
I did the full day fruit carving class. We mainly focused on forming flower-, petal- and leaf shapes from tomatoes, carrots, radishes, cucumbers, and pumpkins. I think this would be a great course for food professionals like caterers and chefs, and anyone looking to up his or her presentational skills. Be warned: fruit and vegetable carving is a LOT harder than it looks, and you'll be grateful for Khun Wan's guidance.
First I would like to thank again to Wan for her patience to teach me. 3 days' basic course was so intense. I learned so much about Thai traditional carving and it is just a beginning. I felt the depth of this culture. Wan is an amazing teacher and artist. I am very pleased to have met Wan and have seen Wan's knife techniques. Elegant and very high artistic skill.
