Katong, home of the Peranakans. Singaporean cuisine is diverse and with heavy influences from several ethnic groups, as a result of its history as a seaport with a large immigrant population.

The Peranakan (or Nonya) cuisine is a blend of Chinese ingredients with spices and cooking techniques of the Malays, giving it a unique aroma, texture and taste. Katong Laksa and Nonya Bak Zhang are two quintessential Paranakan dishes.

We had stayed in the Katong neighborhood once before and loved it. Made for walking and it seems like a hundred restaurants. We wanted to try the Peranakan cuisine a fusion of Chinese and Malay. Natalee said she would feed us until we fell over. She gave us much info on the food, the culture, and Singapore.We stopped just short of falling over, but try everything some you like some probably not so much but you will have a good handle on this cuisine when you are done. Does envolve a lot of walking, let's you eat more.

Upon landing in Singapore, we headed to the historic Katong district for a wonderful experience learning about this historic area and sampling an amazing array of foods all within a few blocks! Katong is a bit out of the center but really historic and where the real Singapore lives. There were only two of us in the group so we received amazing attention from our lovely guide (Eisler?) who was prepared with napkins, water, utensils, plates and lots of helpful tips. . As a chef himself, our guide knew so much about the source and preparation of all that we sampled. Go hungry as you will be stuffed! Well worth the time and $.
