I’ll bring you along a complete tour to discover all the steps of Parmigiano Reggiano’s production. We’ll see where the animals are bred and where the milk is mould. We’ll go into the cheese factory during milk processing and we'll witness in cooking and making cheese wheels. We’ll see then the process of salting and maturing up to enter the huge “caveau”, where thousands of cheeses wheels are guarded and laid out in long rows in the silent maturation rooms and where the scent of cheese will smell so nice and exciting that we won’t be able to resist till the final tasting of cheese.
on this special tour you will be able to touch the newborn calves on our farm which happens almost every day.
you will taste the original king of cheeses and many other local artisanal products such as real balsamic vinegar aged over 30 years and parma ham and lambrusco wine
and at the end you will take home with you a piece of real Parmiginao Reggiano aged for 24 months included in this tour

Stop At: Latteria VALLE s.c.a., Via Cantonazzo, 1, 42025 Cavriago RE, Italy

We’ll go into the cheese factory during milk processing and we'll witness in cooking and making of cheese wheels. We’ll see then the process of salting and maturing up to enter the huge “caveau”, where thousands of cheese wheels are guarded and laid out in long rows in the silent maturation rooms and where the scent of cheese will smell so nice and exciting that we won’t be able to resist till the final tasting of cheese and local typical products. I will give you a lab coat and a cap for access to the production area. I’ll bring you along a complete tour to discover all the steps of Parmigiano Reggiano’s production.

Farm with cows milked and newborn calves. We’ll see the places, where the animals are bred and where the milk is mold.
If we are lucky we will see a newborn calf it often happens in the morning.

Stop At: Antico Podere Emilia, Via Carlo Darwin, 2, 42123 Reggio nell'Emilia RE, Italy

An ancient farm transformed into a farmhouse where we will have a coffee break in the morning as soon as we arrive and at the end of the tour we will do the tasting of cheeses aged 12, 24, and 36 months with typical Emilian salami and a glass of Lambrusco DOC wine and 3 aged balsamic vinegar of 8 and 15 and 30 years.

    Claudio is amazing and the tour was just as good! Wonderful surroundings, interesting information and overall very generous - We received both a smaller breakfast and later on a cheese tasting including local balsamico, local wine and charcuteries. You will regrett not doing this if ever visting Milan/this region of Italy!

    We had such a great time! Everything was perfect and well organized. Claudio, the guide and the owner was not only professional but also nice and friendly all the time. I highly recommend this tour if you’re interested in Parmigiano reggiano. It was definitely worth it to try and I want to visit someday again!

    Claudio was the perfect guide, driving us to view Parmesan cheese making, from start to finish, beginning with the cows and then tasting aged cheese from different years. Following that we drove to see how balsamic vinegar is made, followed by tasting different varieties and noticing the variations based on aging. A fantastic day outing!

    We had such a great experience with Claudio! He picked us up from the train station, and after a short drive through the countryside, we arrived at his family's cheesemaking facility. It was so cool to see the process from start to finish. Everyone involved was so kind and informative. We finished the tour back at the farmhouse with a beautiful spread of parmigiana reggiano, prosciutto, balsamico, and wine. This is a must-do if you love cheese!

    “I don’t think a better parmesano reggiano tour could possibly exist! This was perfect and so fun . We learned a ton and got to see how the cheese is made from every single step beginning to end and most importantly the cheese tasting (and salame, Lambrusco, and vinegar Tastings too!) were fantastic.
